Egusi pumpkin is identical to a watermelon, but the internal pulp is bitter and has a sour taste. Egusi are grown predominantly for their internal seeds. Egusi seeds are composed of more than 78% unsaturated fats, proteins, vitamins A B1 B2 C, different types of acids and many minerals (phosphorus potassium magnesium, calcium sodium iron zinc manganese and copper). The name Egusi comes from the Igbo and Youruba languages, they can also be called Ibara, Agushi, Ikpoghiri, Neri Niri. They are used as a thickener for soups and stews throughout West Africa.
